Spruce occupies a converted garage on Sacramento Street in Presidio Heights, with chocolate mohair walls, faux ostrich chairs, and a dining room that has been the neighborhood's gathering place since 2007. Bacchus Management Group is a San Francisco-based independent restaurant group that opened Spruce in 2007 as its Pacific Heights flagship. The group operates SMIP Ranch, a private five-acre organic farm in the hills above Woodside, which supplies nearly all of Spruce's produce. The farm-to-table commitment is structural rather than promotional: the ranch produces exclusively for Bacchus properties, giving the kitchen direct control over what arrives at the table.
